Wat is dat eigenlijk? Het is een stoofpot van zwarte bonen en verschillende soorten vlees.
Het was vroeger, tijdens de slavernij in Brazilië een slavengerecht. Delen van het varken wat niet door de slavenhouders werd gegeten werd aan de slaven gegeven en dat gemengd met de zwarte bonen.
Tegenwoordig is het een van de Nationale gerechten in Brazilië. Het wordt geserveerd met witte gebakken rijst, vinaigrette (officieel met "couve", maar dat is een blad groente wat hier niet te verkrijgen is), farofa (gemaakt van een grovere variant van cassave meel) en sinaasappelen. En veel en veel vlees, varkensvlees en rundvlees.
